Lemon Blueberry Loaf Weight Watchers Recipe

Lemon Blueberry Loaf Weight Watchers Ingredients:

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsweetened applesauce
  • ½ cup Truvia Baking Blend (or another sugar substitute)
  • 2 large eggs
  • ⅓ cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • ½ cup plain non-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon of flour to prevent sinking)

Lemon Blueberry Loaf Weight Watchers Directions:

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the unsweetened applesauce and Truvia Baking Blend together until well combined.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the lemon juice, lemon zest, Greek yogurt, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • Gently fold the flour-coated blueberries into the batter.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
