4 medium russet potatoes, peeled and cut into 1/2-inch cubes
4 large carrots, peeled and cut into 1/2-inch dice
2 packets Lipton Recipe Secrets Onion Soup Mix
1 1/2 cups water
Slow Cooker 4-Ingredient Poor Man’s Stew Directions
Brown the ground beef in a large skillet over medium-high heat for 8 minutes, breaking it up with a spoon, until no pink remains.
Drain the excess fat and transfer the cooked beef to a plate.
Add the potatoes and carrots to the bottom of a 5- to 6-quart slow cooker and spread them into an even layer.
Spoon the browned beef evenly over the vegetables.
Sprinkle the onion soup mix over the top.
Pour in 1 1/2 cups water and stir lightly for 20 seconds to moisten the seasoning.
Cover and cook on LOW for 6 hours or on HIGH for 3 1/2 hours, until the potatoes and carrots are tender.
Stir the stew well for 1 minute so the beef and vegetables are coated in the gravy.
If needed, add 2 to 4 tbsp water to loosen the texture before serving.
Serve hot in 6 portions, about 1 1/4 cups each.
