Whisk the flour, cornstarch, instant yeast, baking soda, and sugar together in a large bowl.
In a separate bowl, whisk the egg, yogurt, lemon juice, lemon zest, and cooking oil until smooth.
Add the wet mixture to the dry ingredients and stir until a very soft, slightly sticky dough forms.
Cover the bowl and let the dough rise in a warm place for 45–60 minutes, until noticeably puffy.
