Mango Float Recipe
Juicy ripe mangoes, soft cake-like graham layers, and a cool whipped cream filling come together in a silky tropical dessert that is creamy, fruity, and irresistibly refreshing straight from the refrigerator.
Mango Float Ingredients:
4 ripe mangoes, thinly sliced, with some diced for topping
8 oz reduced-fat cream cheese, softened
1 cup heavy whipping cream, well chilled
¾ cup fat-free sweetened condensed milk
½ tsp pure vanilla extract
1½ packs whole-grain graham crackers, with some crushed for topping
Mango Float Instructions:
Beat the chilled heavy whipping cream in a cold mixing bowl until stiff peaks form.
In a separate bowl, beat the softened reduced-fat cream cheese until completely smooth.
Add the sweetened condensed milk and vanilla and beat until creamy and evenly combined.
Gently fold the whipped cream into the cream cheese mixture until light, smooth, and fluffy.
Arrange a single layer of whole graham crackers across the bottom of a 9×9-inch dish, breaking pieces as needed to cover the surface.
Spread a layer of the cream mixture evenly over the crackers.
Arrange a layer of thinly sliced mango over the cream.
Repeat the graham cracker, cream, and mango layers until the ingredients are used, finishing with a smooth layer of cream.
Scatter the reserved diced mango and crushed graham crackers evenly over the top.
Cover and refrigerate overnight, until thoroughly chilled and the graham crackers have softened into cake-like layers.
Slice into 12 squares and serve cold.
