Skinny One Pot Chili Mac and Cheese Ingredients:

  • 1 lb lean ground turkey (98% lean)
  • 8 oz dry whole wheat elbow macaroni
  • 1 small onion, chopped
  • 3 garlic cloves, minced (or 1 Tbsp minced garlic)
  • 2 (15 oz) cans tomato sauce (no added sugar)
  • 1 (16 oz) can dark red kidney beans, drained
  • 1 (4 oz) can diced fire-roasted green chilies
  • 1 (14.5 oz) can diced petite tomatoes, undrained
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded reduced-fat cheese (such as 2% shredded mozzarella or cheddar)
  • Optional garnishes: sliced green onions, fat-free sour cream or plain yogurt, or additional reduced-fat cheese

Skinny One Pot Chili Mac and Cheese Directions:

  • Cook the pasta:
    Fill a large Dutch oven or stockpot with water and cook whole wheat macaroni according to package directions. Drain and set aside.
  • Cook the turkey:
    Spray the pot with nonstick cooking spray. Add ground turkey and cook over medium-high heat for about 5 minutes, breaking it up with a spatula. Drain excess liquid if necessary.
  • Sauté aromatics:
    Add the chopped onion and minced garlic to the pot. Cook until onions are soft and fragrant.
  • Build the sauce:
    Stir in the tomato sauce, diced tomatoes, green chilies, kidney beans, chili powder, cumin, salt, and pepper. Bring to a simmer, stirring occasionally. Let cook for about 15 minutes.
