Holy Mess Vegetable Soup
Ingredients:
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 large carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 bell pepper, any color, diced
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups vegetable broth (low sodium)
- 2 cups water
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups chopped kale or spinach (optional)
- 1 can (15 oz) cannellini beans or any white beans, rinsed and drained (optional)

Instructions:
- Prepare Vegetables: In a large pot, spray some cooking spray or add a small amount of olive oil. Add the chopped onion and minced garlic, sautéing over medium heat until the onion is translucent.
- Add Vegetables: Add the carrots, celery, zucchini, yellow squash, bell pepper, and green beans. Cook for about 5 minutes, stirring occasionally.
- Add Tomatoes and Broth: Add the canned tomatoes with their juice, vegetable broth, water, basil, oregano, thyme, salt, and pepper. Bring the mixture to a boil.
- Simmer: Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
- Add Greens and Beans: If using, stir in the chopped kale or spinach and the white beans. Cook for an additional 5 minutes until the greens are wilted and the beans are heated through.
- Serve: Taste and adjust seasoning with salt and pepper if needed. Serve hot.
