Holy Mess Vegetable Soup

Ingredients:

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 bell pepper, any color, diced
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth (low sodium)
  • 2 cups water
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach (optional)
  • 1 can (15 oz) cannellini beans or any white beans, rinsed and drained (optional)

Instructions:

  1. Prepare Vegetables: In a large pot, spray some cooking spray or add a small amount of olive oil. Add the chopped onion and minced garlic, sautéing over medium heat until the onion is translucent.
  2. Add Vegetables: Add the carrots, celery, zucchini, yellow squash, bell pepper, and green beans. Cook for about 5 minutes, stirring occasionally.
  3. Add Tomatoes and Broth: Add the canned tomatoes with their juice, vegetable broth, water, basil, oregano, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Simmer: Reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.
  5. Add Greens and Beans: If using, stir in the chopped kale or spinach and the white beans. Cook for an additional 5 minutes until the greens are wilted and the beans are heated through.
  6. Serve: Taste and adjust seasoning with salt and pepper if needed. Serve hot.
