Simple Oven-Baked Barbecue Pork Chops Directions:

Preheat the oven to 400°F.
Coat a 9x13-inch baking dish with nonstick cooking spray.
Pat the pork chops completely dry with paper towels.
In a small bowl, mix kosher salt, black pepper, smoked paprika, garlic powder, onion powder, brown sugar, and cayenne pepper.
Rub both sides of the pork chops with olive oil.
Sprinkle the spice rub evenly over both sides of each pork chop and press gently to adhere.
In a separate small bowl, stir barbecue sauce, apple cider vinegar, and Dijon mustard until smooth.
Arrange the pork chops in a single layer in the prepared baking dish.
Brush half of the barbecue sauce mixture evenly over the tops of the pork chops.
Cover the baking dish tightly with foil.
Bake on the center rack for 15 minutes.
Remove the foil and brush the pork chops with half of the remaining sauce.
Bake uncovered for 8 minutes.
Brush with the remaining sauce.
Bake uncovered for 5 minutes, until the thickest part of each pork chop reaches 145°F away from the bone.
Remove the baking dish from the oven.
Rest the pork chops for 5 minutes before serving.
Serve 1 pork chop per serving with pan juices spooned over the top.
