Oven Baked 5-Ingredient Stuffed Pepper Pasta Directions:
Preheat the oven to 375°F using a conventional oven setting.
Coat a deep 3-quart oval baking dish with nonstick cooking spray.
Place a large 12-inch skillet over medium-high heat and add the olive oil.
Add the ground beef and break it into small crumbles with a wooden spoon.
Season the beef with 1 tsp kosher salt and 1/2 tsp black pepper.
Cook for 6–8 minutes, stirring often, until no pink remains and excess moisture has cooked off.
Drain excess fat from the skillet.
Chop the green bell peppers into bite-size pieces.
In a large mixing bowl, combine the uncooked pasta, uncooked rice, and chopped green bell peppers.
Add the cooked ground beef to the bowl.
Pour in the tomato pasta sauce and 4 cups water.
Stir for 1 minute, scraping the bottom of the bowl, until the pasta and rice are fully coated and no dry pockets remain.
Pour the mixture into the prepared baking dish and spread it into an even layer.
Press the pasta and rice below the liquid with the back of a spoon.
Cover the baking dish tightly with foil and crimp the edges to trap steam.
Bake covered for 50 minutes.
Carefully remove the foil and check the center of the casserole.
If the rice or pasta is still firm, cover again and bake for 10 more minutes.
Remove the foil and sprinkle the shredded mozzarella evenly over the top.
Bake uncovered for 12 minutes, until the cheese is melted and bubbling.
Let the casserole rest for 10 minutes before serving.
Cut or scoop into 8 servings, about 1 1/2 cups each.
Serve warm.
