Amish Baked Bean Potato Casserole Directions:

Preheat the oven to 375°F.
Grease a 2 1/2-quart ceramic baking dish with the softened butter, coating the bottom and sides evenly.
Cook the bacon in a 10-inch skillet over medium heat for 8 minutes, turning as needed, until crisp.
Transfer the bacon to a paper towel-lined plate, let it cool for 5 minutes, then chop it into small pieces.
Layer the sliced potatoes evenly in the prepared baking dish, overlapping them slightly.
Stir the baked beans in the cans for 15 seconds to loosen the sauce, then spread them evenly over the potatoes.
Cover the dish tightly with foil and bake on the middle rack for 50 minutes, until the potatoes are tender when pierced with a knife.
Remove the foil and sprinkle the cheddar cheese evenly over the top.
Bake uncovered for 12 minutes, until the cheese is melted and lightly browned in spots.
Sprinkle the chopped bacon over the cheese and return the dish to the oven for 3 minutes.
Remove the casserole from the oven and let it rest for 8 minutes.
Sprinkle the chopped parsley over the top and serve warm.
