Strawberry Cream Cheese Loaf Directions:
Preheat the oven to 350°F.
Lightly grease a 9x5-inch glass loaf pan.
Line the pan with parchment paper, leaving overhang on the long sides.
In a medium bowl, whisk together 1 1/2 cups all-purpose flour, baking powder, baking soda, and salt.
In a large mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
Add the granulated sugar and beat until light and fluffy.
Beat in the eggs one at a time.
Add the vanilla extract and mix until combined.
Add half of the dry ingredient mixture and mix on low just until mostly combined.
Add the milk and mix on low until smooth.
Add the remaining dry ingredients and mix just until no dry flour remains.
Toss the chopped strawberries with 1 tbsp all-purpose flour.
Gently fold the strawberries into the batter.
Spoon the batter into the prepared loaf pan and smooth the top.
Sprinkle the top with coarse sugar or granulated sugar, if using.
Bake for 50–60 minutes, until the top is lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
Cool in the pan for 20–30 minutes.
Lift the loaf out using the parchment overhang or slice directly in the pan.
Serve warm or at room temperature.
