Slow Cooker Poor Man’s Potatoes & Gravy Directions:

Lightly coat the inside of a 4- to 6-quart slow cooker with cooking spray.
Place the potato chunks in an even layer in the bottom of the slow cooker.
In a medium bowl or large measuring cup, whisk together the reduced-sodium dry brown gravy mix and water until the powder is fully dissolved and no lumps remain.
Pour the gravy mixture evenly over the potatoes, making sure most of the potatoes are at least partially covered by liquid.
Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes are very tender when pierced with a fork.
Gently stir from the bottom to coat all the potato chunks in the thickened gravy.
If the gravy seems thin, leave the lid off and cook on HIGH for 15 to 20 minutes, stirring once or twice, until slightly reduced.
Serve hot in shallow bowls or on plates, spooning extra gravy over the potatoes. Add black pepper at the table, as desired.
