Slow Cooker Depression-Era Chicken and Lima Beans Directions:
Rinse lima beans under cool running water and pick out any broken beans or debris.
Place lima beans in the bottom of a 5- to 7-quart slow cooker.
Place chicken breasts on top of the beans in a single layer.
Pour chicken broth over the chicken and beans.
Sprinkle with kosher salt and black pepper.
Cover and cook on LOW for 8–10 hours, or on HIGH for 4–5 hours, until the lima beans are tender and the chicken shreds easily.
Remove chicken from the slow cooker.
Shred chicken with two forks.
Return shredded chicken to the slow cooker.
Stir until chicken and lima beans are evenly combined.
Taste and adjust salt and pepper if needed.
Serve hot.
