Heat a large nonstick skillet over medium-high heat. Cook the ground beef for 5–7 minutes, breaking it into small crumbles, until browned and fully cooked. Drain any liquid or excess fat.
Transfer the cooked beef to a 4- to 6-quart slow cooker.
Add the evaporated milk, cream of mushroom soup, and onion soup mix. Stir until evenly combined.
Cover and cook on LOW for 3–4 hours or on HIGH for 1 1/2–2 hours, stirring once if convenient, until the sauce is hot and creamy.
About 20 minutes before serving, cook the egg noodles in boiling water according to the package directions until just tender, then drain well.
Stir the cooked noodles into the slow cooker.
Cover and let stand for 5–10 minutes so the noodles absorb some of the sauce.
Taste and season with black pepper if desired.
Serve hot in 8 equal portions.
