Cook the ground beef in a large skillet over medium-high heat until browned and it reaches 160°F.
Drain any excess liquid.
Transfer the cooked ground beef to a 5- to 6-quart slow cooker.
Add the beef gravy and beef stock.
Stir until the gravy is smooth and evenly combined with the beef.
Cover and cook on LOW for 2 to 3 hours or on HIGH for 1 to 1 1/2 hours.
Stir in the dry egg noodles and press them gently into the gravy.
Cover and cook on HIGH for 25 to 35 minutes, stirring once halfway through, until the noodles are tender.
Let the noodles rest uncovered for 5 minutes so the gravy thickens slightly.
Season with black pepper if desired.
Serve hot.
