- 2 cups broccoli florets, blanched and cooled
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fat-free feta cheese, crumbled (instead of reduced-fat feta)
- 1/4 cup black olives, sliced (optional)
- 2 tablespoons fresh parsley, chopped
Dressing:
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
