Green Pepper Steak Directions:

In a bowl, marinate the steak in 1 tbsp soy sauce and sugar for 15 minutes.

In a small bowl, whisk cornstarch, beef broth, and remaining 1 tbsp soy sauce. Set aside.

Heat 1 tsp oil in a large nonstick skillet over medium-high heat. Sear half the beef until browned, flip and cook 2 more minutes. Remove and repeat with 1 tsp more oil and remaining beef.

Reduce heat to medium. Add bell peppers, onions, and black pepper to the pan. Cook for 5–7 minutes until crisp-tender and slightly charred.

Stir in garlic, ginger, and optional red pepper flakes. Cook for 1 minute until fragrant.

Return beef to pan, add broth mixture. Simmer 3–4 minutes until thickened.

Stir in tomatoes and cook 1 more minute.

Serve over cooked brown rice and top with soy sauce.
