French Onion Meatloaf Directions:

  • Preheat a conventional oven to 350°F. Lightly coat a standard 9x5-inch loaf pan with cooking spray.

  • Heat a large skillet over medium heat and melt the butter.

  • Add the sliced onions and sugar. Cook for 20 minutes, stirring occasionally, until fully caramelized and golden brown.

  • In a large bowl, combine ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently until just combined.

  • Fold in the caramelized onions, reserving 1/4 cup for topping.

  • Transfer the meat mixture into the prepared loaf pan and press gently to form an even loaf.

  • Spread the reserved onions evenly over the top.

  • Bake for 45 minutes.

  • Remove from the oven, sprinkle Swiss cheese evenly over the loaf, and return to the oven.

  • Bake for an additional 15 minutes until the cheese is fully melted.

  • Remove from the oven and let rest for 10 minutes before slicing.
