French Onion Meatloaf Directions:
-
Preheat a conventional oven to 350°F. Lightly coat a standard 9x5-inch loaf pan with cooking spray.
-
Heat a large skillet over medium heat and melt the butter.
-
Add the sliced onions and sugar. Cook for 20 minutes, stirring occasionally, until fully caramelized and golden brown.
-
In a large bowl, combine ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, salt, black pepper, and dried thyme. Mix gently until just combined.
-
Fold in the caramelized onions, reserving 1/4 cup for topping.
-
Transfer the meat mixture into the prepared loaf pan and press gently to form an even loaf.
-
Spread the reserved onions evenly over the top.
-
Bake for 45 minutes.
-
Remove from the oven, sprinkle Swiss cheese evenly over the loaf, and return to the oven.
-
Bake for an additional 15 minutes until the cheese is fully melted.
-
Remove from the oven and let rest for 10 minutes before slicing.
