Caramelized Apple Layer Cake Directions:

  • Preheat oven to 350°F (175°C). Line two 8-inch round cake pans with parchment and spray lightly with nonstick spray.

  • In a large bowl, whisk flours, sweetener, baking powder, baking soda, cinnamon, and salt.

  • In another bowl, whisk eggs, applesauce, oil, yogurt, and vanilla until smooth.

  • Add wet ingredients to dry ingredients and stir just until combined.

  • Gently fold in the apple slices.

  • Divide batter evenly between the pans.

  • In a small saucepan over low heat, melt butter, brown sugar, and almond milk until it forms a smooth caramel.

  • Pour half of the caramel into each pan over the batter.

  • Bake for 28–32 minutes, until a toothpick inserted in the center comes out clean.

  • Cool in pans 10 minutes, then remove and cool completely.

  • Stack layers caramel-side up. Serve as is or lightly warm slices before serving.
