Bourbon Chicken with Broccoli Directions
Place the cubed chicken in a medium bowl and toss with cornstarch, salt, and black pepper until evenly coated.
Whisk together bourbon, low-sodium soy sauce, honey, apple cider vinegar, and red pepper flakes in a small bowl until fully combined.
Heat 1 tbsp olive oil in a 12-inch heavy-bottomed skillet over medium-high heat. Add the chicken in a single layer and cook for 6 minutes, turning halfway, until golden brown and internal temperature reaches 165°F. Transfer to a plate.
Add broccoli and 2 tbsp water to the same skillet. Cover with a lid and steam over medium heat for 2 minutes until bright green and fork-tender.
Remove the lid, push broccoli to one side, add remaining 1 tbsp olive oil, garlic, and ginger. Cook for 30 seconds over medium heat.
Return chicken to the skillet and pour in the bourbon sauce. Simmer over medium heat for 3 minutes, stirring constantly, until the sauce thickens and evenly coats the chicken and broccoli. Remove from heat and serve immediately.
