Place the onion wedges and garlic cloves in the bottom of a 5- to 7-quart slow cooker.
Pat the pork sirloin roast dry.
Combine the Italian seasoning, kosher salt, and black pepper in a small bowl.
Rub the seasoning mixture evenly over the pork.
Place the pork on top of the onions and garlic.
Pour the beef broth around the sides of the pork.
Cover and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the pork is tender and reaches at least 145°F.
Transfer the pork to a cutting board and let it rest for 10 minutes.
Skim and discard visible fat from the cooking juices.
Slice the pork against the grain or shred gently with two forks.
Serve the pork with the onion wedges, garlic cloves, and spoonfuls of the warm cooking juices.
