Bread and Butter Pudding Directions:

  • Preheat your oven to 356°F (180°C), and lightly grease a baking dish.
  • Cut the bread slices into triangles, and spread the light margarine on one side of each triangle.
  • Arrange the bread slices in the baking dish, butter-side up, and sprinkle the sultanas on top.
  • In a bowl, whisk together the eggs, unsweetened almond milk, sugar substitute, cinnamon, and vanilla extract.
  • Pour the mixture over the bread slices, ensuring every slice is coated with the mixture.
  • Grate some nutmeg on top, and let the mixture sit for 10-15 minutes to soak into the bread.
  • Bake for 40-45 minutes until golden brown.
  • Serve warm.
