WW Chicken Enchilada Bake Directions:

  • Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • In a large bowl, combine the shredded chicken, fat-free Greek yogurt, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Spread ½ cup of enchilada sauce on the bottom of the prepared baking dish. Place 4 corn tortillas over the sauce, overlapping as needed.
  • Spread half of the refried beans over the tortillas, followed by half of the chicken mixture. Pour ½ cup of enchilada sauce over the chicken, and sprinkle with ½ cup of shredded cheddar cheese.
  • Repeat the layers with the remaining ingredients, ending with the remaining cheese on top.
  • Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro if desired and serve hot.
