- 4 whole wheat lasagna noodles, broken into bite-sized pieces
- ½ cup fat-free ricotta cheese
- ¼ cup fat-free shredded mozzarella cheese (for mixing)
- ¼ cup part-skim shredded mozzarella cheese (for garnish)
- 2 tbsp grated Parmesan cheese
- 2 cups spinach (optional)
- Salt and black pepper to taste
