Vegetable Croquettes Directions:

  • Grate the zucchini, carrot, and potato.

  • Place the grated vegetables in a clean kitchen towel or strainer and squeeze out as much excess water as possible.

  • Transfer the drained vegetables to a large mixing bowl.

  • Add the eggs, oats, reduced-fat cheese, salt, and any optional seasonings.

  • Mix thoroughly until a moldable mixture forms.

  • With clean hands, shape the mixture into small croquettes or patties of desired size.

  • To cook, choose one of the following methods:

    • Oven: Place croquettes on a baking tray lined with parchment paper and bake at 400°F for 20-25 minutes, flipping halfway through.

    • Air Fryer: Cook at 360°F for 15-18 minutes.
