Teriyaki Chicken Casserole Directions:

Preheat oven to 375°F and lightly coat a 9×13-inch baking dish with nonstick spray.
In a saucepan over medium heat combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger and bring to a steady simmer for 3 minutes.
Stir cornstarch and water in a small bowl until completely smooth and whisk into the simmering sauce, cooking exactly 2 minutes until thickened, then remove from heat.
In a large mixing bowl combine cooked rice, chicken, broccoli, bell pepper, carrots, and half of the green onions and mix evenly.
Pour ¾ of the teriyaki sauce over the mixture and stir thoroughly to coat all ingredients.
Transfer mixture evenly into the prepared 9×13-inch baking dish and drizzle remaining sauce over the top.
Cover tightly with foil and bake for 20 minutes.
Remove foil and bake an additional 8 minutes until fully heated through and lightly golden on top.
Let rest 5 minutes, then slice into 6 equal portions and top with remaining green onions before serving.
