Swabian Beef Roast with Onions Directions:
Preheat oven to 325°F. Pat the beef completely dry and season evenly with salt and black pepper.
Heat a 6-quart Dutch oven over medium-high heat and coat lightly with cooking spray. Sear the beef 4 minutes per side until browned. Remove and set aside.
Reduce heat to medium. Add sliced onions to the pot and cook 20 minutes, stirring every 2 minutes, until deeply golden and soft. Add garlic and cook 1 minute.
Stir in tomato paste and cook 1 minute. Pour in fat-free beef broth and scrape the bottom thoroughly. Add thyme and bay leaf.
Return beef to the pot. Cover tightly and transfer to the oven. Roast 2 hours until internal temperature reaches 200°F and fork-tender.
Remove beef and rest 15 minutes. Simmer sauce uncovered on stovetop 10 minutes to slightly reduce. Slice into 8 equal portions, 4 oz each, and spoon onions and gravy evenly over each portion.
