  • Begin by trimming any fat off the chicken breasts and slicing them into thin strips or bite-sized pieces.
  • Wash and chop the vegetables: cut the broccoli into bite-sized florets, peel and slice the carrot thinly, and slice the onion as thinly as possible.
  • Mince the garlic and fresh ginger.
  • In a small bowl, combine soy sauce, rice vinegar, honey, grated ginger, and cornstarch. Whisk everything together until the cornstarch is dissolved. Adjust the sauce to taste if needed (more honey for sweetness, more vinegar for acidity, or chili paste for heat).
  • Heat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of olive oil (or cooking spray) to the pan.
  • Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from the pan and set aside.
