• Preheat oven to 425°F. Whisk flour, baking powder, baking soda, and salt in a large bowl. Cut in the cold butter until coarse crumbs form.
• Add cold buttermilk and 1/4 cup shredded fat-free cheddar. Stir just until the dough comes together. Turn onto a lightly floured surface, fold several times, roll to 1-inch thickness, and cut into 10 rounds.
• Sprinkle the remaining 1/4 cup shredded fat-free cheddar lightly over the tops. Bake for 12–15 minutes until golden and the cheese on top is lightly browned.
• Cook the turkey sausage in a skillet over medium heat, breaking it into small crumbles, until browned and cooked through.
• Split each warm biscuit horizontally. Spoon the hot sausage crumbles inside and add a thin layer of the melted cheddar from the tops.
• Close the biscuit and serve immediately while warm.
