Southern 3-Ingredient Bacon Wrapped Tater Bites Directions:
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with foil and lightly coat it with cooking spray.
Cut each slice of thin-cut center-cut bacon into 3 equal pieces so you have 24 small strips.
Place the brown sugar in a shallow bowl and break up any clumps with your fingers or a fork.
Working one at a time, place a frozen tater tot at the end of one bacon strip. Roll the bacon around the tater tot so it overlaps slightly, then press the seam gently to help it hold.
Roll each bacon-wrapped tater tot lightly in the brown sugar, using just enough to coat the bacon in a thin layer.
Arrange the bites seam-side down on the prepared baking sheet, spacing them slightly apart so the bacon can crisp.
Bake for 20–25 minutes, until the bacon begins to brown and the sugar starts to melt into a light glaze.
Carefully turn each bite with tongs, then return the baking sheet to the oven and bake for another 8–12 minutes, until the bacon is crisp around the edges and the glaze looks glossy.
Let the bites rest on the baking sheet for about 5 minutes before serving so the glaze thickens slightly.
Serve warm as a party-style appetizer. If desired, add toothpicks after baking for easier serving.
