  • 2¾ cups 0 flour (King Arthur Organic All-Purpose Flour)

  • 1⅔ cups white potatoes, peeled and boiled (Yukon Gold Potatoes)

  • ¾ cup warm water (filtered)

  • 2 tbsp extra virgin olive oil (California Olive Ranch Everyday EVOO)

  • ½ oz fresh yeast (Red Star Fresh Compressed Yeast)

  • 1¼ tsp salt (Morton Kosher Salt)

For the Emulsion:

  • 2 tbsp extra virgin olive oil (California Olive Ranch Everyday EVOO)

  • 2 tbsp water

  • 1–2 sprigs fresh rosemary (Simple Truth Organic Rosemary)

  • Salt to taste (Morton Kosher Salt)

For the Pan:

  • Extra virgin olive oil as needed (California Olive Ranch Everyday EVOO)
