Preheat the oven to 350°F. Lightly spray a 9x13-inch glass casserole dish.

Pat the pork chops dry and season both sides evenly with salt, pepper, garlic powder, and onion powder.

Place the flour in a shallow dish and lightly dredge each pork chop, shaking off excess. Reserve 1 tablespoon of the flour.

Heat a large skillet over medium-high heat and coat with vegetable oil spray. Brown the pork chops for 3 minutes per side, just until golden. Transfer to the casserole dish in a single layer.

Reduce heat to medium. Add the sliced onion and cook for 6 minutes until soft and lightly golden. Add garlic and cook for 30 seconds.

Sprinkle the reserved flour over the onions and cook for 1 minute, stirring constantly.

Slowly pour in the diet cola while scraping the skillet. Add chicken broth, Worcestershire sauce, ketchup, thyme, and bay leaf. Simmer for 3 minutes until slightly thickened.

Cover tightly with foil and bake for 50 minutes, until pork is very tender.
