Place 2 lb chicken breasts in a single layer in a 6-quart slow cooker. If thicker than 1 inch, slice each breast lengthwise into two even pieces.
In a medium bowl, whisk together tomato sauce, minced chipotle peppers, adobo sauce, honey, lime juice, cumin, salt, black pepper, garlic if using, and chicken broth until fully smooth.
Pour the sauce evenly over the chicken, ensuring all pieces are completely coated.
Cover and cook on LOW for 5 hours or HIGH for 3 hours, until the internal temperature reaches 165°F and the chicken shreds easily.
Shred the chicken directly inside the slow cooker using two forks and mix thoroughly with the sauce.
