Smoked Sausage and Potato Skillet Directions:

Heat a large cast iron skillet over medium heat for 3 minutes.
Add 3 tbsp olive oil and heat until hot.
Add the potatoes with salt and pepper and sauté for 10 minutes until golden brown.
Remove potatoes to a plate.
Add remaining 1 tbsp oil and heat.
Add sliced sausage and cook for 5 minutes until browned.
Add onion, garlic, and bell pepper and cook until softened.
Add Italian seasoning, red pepper flakes, salt, and black pepper and cook for 2 minutes.
Pour in chicken stock and scrape the bottom of the skillet.
Add hot sauce and stir.
Return potatoes to skillet and toss to combine.
Top with parsley and optional Parmesan.
Serve 1 portion as about 1 1/2 cups.
