Slow Cooker Salmon Directions:

  • Line the inside of the slow cooker pot with parchment paper.
  • Layer half of the lemon slices and garlic at the bottom of the slow cooker, then place the seasoned salmon fillets on top.
  • Pour in the vegetable broth and lemon juice, then top the salmon with the remaining lemon slices and light butter cubes.
  • Cover and cook on low for 2 hours, or until the salmon is opaque and cooked through (internal temperature should reach 145°F).
  • Serve the salmon with your favorite sides, such as roasted vegetables or a light salad, and garnish with fresh dill.
