Place the pork loin in the bottom of a 5- to 6-quart slow cooker with the fat side facing up and pat the surface dry with paper towels.
In a small bowl whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, salt, and black pepper until smooth.
Pour the maple Dijon mixture evenly over the pork loin and spoon some sauce along the sides so it collects at the bottom of the slow cooker.
Cover with the lid and cook on LOW for 6 hours or on HIGH for 3 hours until the pork reaches an internal temperature of 145°F.
Transfer the pork to a cutting board and let it rest for 10 minutes.
Skim excess fat from the cooking liquid in the slow cooker and stir the remaining sauce.
Slice the pork into 1/2-inch slices and return the slices to the slow cooker to coat them with the sauce before serving.
