Slow Cooker Irish Potatoes Directions:
Place the sliced onion and minced garlic in the bottom of a 6-quart slow cooker.
Add the potato chunks evenly over the onion mixture.
Scatter the butter pieces over the potatoes.
Sprinkle kosher salt, black pepper, and dried thyme evenly over the potatoes.
Pour the broth evenly over the mixture.
Cover and cook on LOW for 5.5 hours or on HIGH for 3.5 hours until the potatoes are very tender when pierced with a fork.
Switch the slow cooker to WARM.
Add the whole milk and sour cream.
Mash the potatoes directly in the slow cooker to the desired consistency.
Stir in the chopped parsley and adjust seasoning if needed.
Sprinkle sliced green onions over the top before serving.
Keep on WARM for up to 2 hours, stirring occasionally.
