Whisk honey and Dijon mustard in a bowl until smooth and fully combined.
Pour the mixture evenly over the chicken and turn once to coat thoroughly.
Cover and cook on LOW for 4–5 hours or on HIGH for 2 1/2–3 hours until the internal temperature reaches 165°F and the chicken shreds easily.
Shred the chicken directly in the slow cooker using two forks and mix into the sauce.
Whisk fat-free evaporated milk with cornstarch if using, then pour into the slow cooker and stir until fully incorporated.
