Slow Cooker Carrot and Potato Mash Directions:

Peel the potatoes and cut them into rough 1-inch chunks.
Peel the carrots and slice them into 1/2-inch rounds so they cook evenly with the potatoes.
Place the potatoes and carrots into a 5- to 6-quart slow cooker in an even layer.
Sprinkle the salt evenly over the vegetables.
Dot the top with 2 tablespoons of butter cut into small pieces.
Cover and cook on HIGH for 3 1/2 hours or on LOW for 6 hours, until vegetables are fork-tender.
Add the remaining 2 tablespoons butter directly into the slow cooker.
Mash the vegetables using a potato masher until fluffy with a slightly chunky texture.
If needed, mash in 1 to 2 tablespoons hot water to loosen while keeping a rustic consistency.
Serve 3/4 cup (about 6 oz) per portion and top each serving with 1 teaspoon additional melted butter if desired.
