Slow Cooker Beef Brisket Directions:

  • Pat the brisket dry with paper towels.

  • In a small bowl, mix salt, black pepper, paprika, garlic powder, onion powder, and dried thyme.

  • Rub the seasoning evenly over all sides of the brisket.

  • Heat olive oil in a large skillet over medium-high heat.

  • Sear the brisket for 3 minutes per side until deeply browned.

  • Transfer the brisket to a 6-quart slow cooker.

  • Scatter sliced onion and minced garlic around and on top of the brisket.

  • In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, brown sugar, and apple cider vinegar.

  • Pour the sauce evenly over the brisket and add bay leaves.

  • Cover and cook on LOW for 9 hours.

  • Remove the brisket and rest for 10 minutes.

  • Slice against the grain into ½-inch slices.
