Slow Cooker Banana Foster Cake Directions:
Lightly coat the inside of a 5- to 6-quart slow cooker with cooking spray, covering the bottom and halfway up the sides.
Arrange the sliced bananas evenly in a single overlapping layer across the bottom of the slow cooker.
In a large mixing bowl combine the flapjack mix, whole wheat flour, Swerve, eggs, Greek yogurt, dark rum, almond milk, cinnamon, salt, and melted light butter.
Mix on low speed until fully combined and smooth with no dry pockets remaining.
Pour the batter evenly over the bananas, spreading gently with a spatula to reach the edges without shifting the fruit layer.
Cover with the lid and cook on LOW for 2 hours and 45 minutes.
Check the center; a toothpick inserted into the cake layer should come out with moist crumbs but no raw batter.
Turn off the slow cooker and let rest covered for 10 minutes before serving.
Scoop from the bottom to lift both the banana layer and cake together in each portion.
