Slow Cooker Bacon Wrapped Sirloin Roast Directions:

Place the 2.5 to 3 pound sirloin roast on a cutting board and pat it very dry with paper towels.
Sprinkle the kosher salt and black pepper evenly over all sides of the roast, pressing gently so the seasoning adheres.
Lay 10 to 12 bacon slices on the cutting board, slightly overlapping them to form a rectangle wide enough to wrap around the roast.
Place the seasoned sirloin at one edge of the bacon rectangle and roll it tightly so the bacon fully covers the meat.
Tuck the bacon ends under the roast or secure loose slices with toothpicks.
Turn a 6-quart slow cooker to LOW while finishing the roast preparation.
Place the bacon-wrapped sirloin roast seam-side down in the center of the slow cooker crock.
Cover and cook on LOW for 4 hours 30 minutes to 6 hours, until the thickest part reaches 130°F for medium-rare or 140°F for medium.
Transfer the cooked roast to a foil-lined baking sheet if crispier bacon is desired.
