Heat a large skillet over medium-high heat. Add the ground beef and cook for 7 to 10 minutes, breaking it into coarse, hearty crumbles rather than very fine pieces. Cook until well browned and no pink remains. Drain any excess fat if necessary.
Add the diced onion and cook for another 3 to 5 minutes, until slightly softened but still visibly chunky.
Transfer the beef and onion mixture to a 5- to 6-quart slow cooker.
Add the petite diced tomatoes with all their juices. Stir gently so the tomato pieces remain visible throughout the mixture. Add the salt and black pepper, if using.
Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the onions are tender and the tomatoes have cooked down into a thick, chunky meat sauce.
