Line two small foil trays or one large foil tray with heavy-duty aluminum foil, leaving enough overhang to lift the trays out later.
Mix 1 cup of the brown sugar and the smoked paprika in a small bowl until fully combined.
Pat the sausages dry with paper towels.
Cut the bacon slices into thirds crosswise.
Wrap each sausage tightly with 1 piece of bacon and place seam-side down in the foil-lined trays in a single snug layer.
Sprinkle the brown sugar-paprika mixture evenly over the wrapped sausages and press lightly so it adheres.
Sprinkle the remaining 1/4 cup brown sugar evenly over the top and around the edges of the trays.
Place the trays inside a 6-quart slow cooker.
Cover and cook on LOW for 4 hours or on HIGH for 2 hours, until the sausages are fully cooked and the bacon is browned and glazed.
For a firmer finish, transfer the trays under a broiler for 2 minutes.
Rest for 5 minutes before serving.
Serve 4 pieces per serving.
