Shrimp Scampi with Spaghetti Directions:
Bring a large 5-quart pot of water to a rolling boil and cook the spaghetti according to package instructions until al dente, 8–9 minutes, then drain and set aside.
Season the shrimp evenly with salt and black pepper.
Heat a 12-inch skillet over medium-high heat and add the olive oil and 1/2 tbsp light butter.
Add the shrimp in a single layer and cook 2 minutes per side until pink and opaque, then remove from the skillet and set aside.
Reduce heat to medium and add the remaining 1/2 tbsp light butter to the same skillet.
Add the chopped onion and cook 3–4 minutes until softened.
Stir in the minced garlic and cook for exactly 30 seconds.
Pour in the white cooking wine and simmer 2–3 minutes until reduced by half.
Add the chicken broth, parsley, oregano, and basil, and simmer 4–5 minutes to slightly thicken.
Return the shrimp to the skillet and toss to coat evenly in the sauce.
Add the cooked spaghetti to the skillet and toss for 1–2 minutes until fully coated.
Serve immediately as 4 servings, each approximately 1 1/4 cups.
