  • Line a 9 x 13 inch pan with parchment paper and lightly coat with cooking spray.

  • In a large microwave-safe bowl, combine erythritol, allulose, skim milk, and light butter.

  • Microwave in 30-second intervals, stirring after each, until butter is fully melted and mixture is smooth.

  • Transfer mixture to a deep saucepan and place over medium heat.

  • Bring to a controlled boil while stirring frequently.

  • Add evaporated milk and reduce heat to medium-low.

  • Simmer gently for 18 minutes, stirring constantly to prevent scorching, until mixture thickens and turns light caramel in color.

  • Remove from heat and stir in vanilla extract.

  • Using a hand mixer, beat mixture for 6 minutes until it thickens slightly and trails remain on the surface.

  • Pour into prepared pan without spreading. Gently tap pan on the counter to level.

  • After 10 minutes, score the surface for portioning.

  • Let set uncovered for 3 hours at room temperature, then cut along score lines.
