Queso Fundido Directions:

  • Preheat oven to 350°F.

  • Heat an 8-inch cast iron pan over medium heat.

  • Add turkey chorizo and cook for 5 minutes, breaking it into small pieces and stirring constantly.

  • Add minced garlic and cook for 1 minute.

  • Remove pan from heat and drain all excess fat.

  • Spread cooked chorizo evenly across the bottom of the pan.

  • Layer half of the Oaxaca-style cheese, half of the Monterey Jack cheese, and half of the goat cheese evenly.

  • Repeat with remaining cheeses.

  • Bake for 10 minutes until cheese is fully melted and bubbling.

  • Broil for 1 minute until lightly blistered.

  • Remove from oven and top with diced tomato and jalapeño.

  • Serve immediately.
