Practical Woman’s Croissant Dough Directions:

In a large mixing bowl, combine the lukewarm milk, yeast, and sugar. Let stand for 5–10 minutes, until slightly foamy.
Add the flour, salt, and 2 tbsp softened butter.
Mix until a shaggy dough forms, then knead for 5–7 minutes, until smooth and elastic.
Shape the dough into a rectangle, wrap it tightly, and refrigerate for about 1 hour.
Place the 1 cup very cold butter between two sheets of parchment paper and pound or roll it into a flat rectangle about half the size of the dough.
Roll the chilled dough into a rectangle large enough to completely enclose the butter.
Place the butter in the center, fold the dough over it, and seal the edges so the butter is fully enclosed.
Roll the dough gently into a long rectangle.
Fold it into thirds like a letter, wrap it, and refrigerate for 30 minutes.
Turn the dough 90 degrees, roll it into another long rectangle, and fold it into thirds again.
Chill for another 30 minutes.
Repeat the rolling, folding, and chilling process one more time.
After the final fold, wrap the dough and refrigerate for at least 1 hour, or overnight, before shaping.
Roll the chilled dough into a large rectangle and cut it into long triangles.
Starting from the wide end, roll each triangle toward the point to form a croissant.
Arrange on a parchment-lined baking sheet, cover loosely, and let rise until noticeably puffy, about 1 1/2–2 hours.
Bake according to your croissant recipe until deeply golden and flaky.

Practical tip:
Keep the dough and laminating butter cold throughout the folding process. If the butter begins to soften or smear, refrigerate the dough before continuing so the layers remain distinct.
