Potato Pancakes (Latkes) Directions:

  • Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).

  • Drain excess liquid from grated potatoes with a towel.

  • In a bowl, mix potatoes, onion, egg, egg whites, flour, baking powder, salt, and pepper.

  • Line a baking sheet with parchment, spray lightly with cooking spray.

  • Scoop 2 tbsp of mixture per pancake, flatten thinly.
