Poor Man Husband Casserole Directions:

  • Preheat the oven to 350°F.
  • In a skillet over medium-high heat, sauté the ground turkey until browned, and drain any excess liquid.
  • Add the Italian seasoning and minced garlic to the skillet and sauté for 30 seconds longer.
  • Pour in the tomato sauce and sugar substitute, add salt and pepper to taste, and simmer for 3-5 minutes.
  • In a bowl, mix together the fat-free sour cream and fat-free cream cheese until smooth.
  • Prepare the shirataki noodles by rinsing and cooking according to package instructions.
  • In a greased 9×13 baking dish, layer half of the noodles, followed by half of the cream cheese mixture, and half of the meat mixture.
  • Repeat with another layer of noodles, cream cheese mixture, and ground turkey.
  • Sprinkle the fat-free cheddar cheese evenly over the top.
  • Bake for 20-25 minutes until the cheese is melted and bubbly.
