Polish Potato Pancakes Directions:

Grate the potatoes and onion using a box grater or food processor. Squeeze the mixture in a clean kitchen towel to remove all excess moisture.

In a large bowl, combine the grated potatoes and onion with eggs, flour, salt, and pepper. Mix until evenly blended.

Heat the vegetable oil in a large nonstick skillet over medium-high heat.

Drop 2 tablespoons of batter for each pancake into the skillet, flattening slightly with the back of a spoon.

Fry each side for 3–4 minutes, until golden and crisp.

Remove pancakes and place on paper towels to absorb excess oil.
